
Wine is sometimes a bit like the premiere of an opera: big names, reverent murmurs – and in the end the question is simply whether or not you like the show you are witnessing. If you want to have your say, there is nothing better than a classic: Chianti Classico.
First of all, a clarification: not all Chianti is Classico. Chianti Classico is born in a very specific area, between Florence and Siena, where the cypresses dance in the wind and the days smell of wild herbs and sunshine. It is here that the historic heart of the denomination beats, recognised since the 18th century as the fulcrum of wine production in the region.
And the Black Rooster? It is much more than a symbol. It is the quality mark of the Chianti Classico Consortium and has its roots in a medieval legend that tells of the rivalry between Florence and Siena. According to the myth, it was the early crowing of a black rooster that gave the Florentines the decisive advantage. Today, that rooster continues to crow on the bottles of the area’s most authentic wines.
But what does a Chianti Classico really taste like? It tastes of ripe cherries, spices and serenity. It has the freshness of summer and the depth of tradition. It is a wine to be sipped slowly, perhaps wearing a linen shirt and watching the hills change colour with the sunset.
